My grandkids get so excited for Halloween, next to Christmas I’m sure it is their favorite time of the year. The 2 older boys will probably be superheroes or ninjas.  Or if they can find any costumes that relate to Fortnite or Minecraft, I’m sure that will be their first choice. Hopefully, we can still get the twins to dress up in something fun from the Disney Store.  Their first Halloween they dressed as Mickey and Minnie Mouse. Those will always be my favorite costumes. Although all of the Disney Characters hold a special place in my heart. I can remember dressing my oldest daughter as Tinker Bell when she was in kindergarten and my son as Buzz Light Year, so much fun. My family has definitely always been a Disney Family. We are now carrying on the tradition with the grandkids.

Making this Candy Corn Poke Cake is pretty easy to do. It only takes a few ingredients. You will need a white cake mix, vegetable oil, water, egg whites, sweetened condensed milk, food coloring, whip topping  (I used cool whip) and candy corn. I also added the candy pumpkins just for fun. It will take a couple of hours to make as you need to put in the freezer for 20 minutes in between each layer. It is also best if chilled for a minimum of 2 hours before serving. I chilled mine overnight.

Don’t like candy corn?  That’s no big deal. It’s just a basic white cake mix with food coloring to make it look like candy corn and you can always leave the candy off the top, or just let those that don’t like it pick it off.

Ingredients

  • 1 Box White Cake Mix
  • 3 Eggs Whites (or as directed on box)
  • 1/4 Cup Vegetable Oil
  • 1 Cup Water
  • 1 14 oz Can Sweetened Condensed Milk
  • Yellow Food Coloring
  • Orange Food Coloring I mixed red and yellow

Instructions

  • Make Cake Batter as directed on the box. Divide into 3 equal parts - make one orange, one yellow and leave one white. (Make sure you add enough to make the colors vibrant)
  • Spray the bottom of a 9 x 13 cake pan with food release, spread the yellow layer in the bottom of the pan, put in the freezer for 20 minutes (be sure to keep flat)
  • Next, carefully add the orange layer to the pan spreading over the yellow layer- return to the freezer for 20 minutes.
  • Preheat oven to 350° or as directed on box
  • Remove cake from the freezer and carefully add the white layer. Let the cake sit on top of stove well oven preheats.
  • Bake according to directions on the box -remove when a toothpick comes out dry
  • As soon as the cake is done poke holes with the end of a wooden spoon. Pour sweetened condensed milk over cake. Refrigerate for at least 2 hrs, overnight is best
  • Spread whipped topping on the cake and garnish with candy corn.

You can whip them up in a jiffy. People will think it took you hours.

After making theApple Pie Cupcakes last week and my family loved them, decided to see what else I could do with a can of apple pie filling. Was debating pie, cake, cookies? Discovered I had some frozen puff pastry in the freezer and that settled it.  Apple Turnovers on Plate

Whenever I took my kids to Arbys, they always begged for the turnovers. Some liked apple and some liked the cherry so we always ordered a variety. I had no idea how easy they were to make at home or I would have been making cinnamon apple turnovers a lot sooner. The only ingredients you will need are a package of puff pastry, you can find these in your grocer’s freezer.  Normally they come with 2 sheets in a box.  If you cut each sheet into 4  – you should get 8 turnovers out of abox.  A Can of Apple Pie Filling, Egg whites to brush dough to help brown, Cinnamon and sugar. So not only easy but fairly cheap.  Much cheaper than running to Arbys  I’m sure.

Let me give you a couple of tips to help you get great Cinnamon Apple Turnovers

  • Be sure to follow the directions on the box for thawing your puff pastry 
  • Well working with the first sheet of pastry, keep the other refrigerated so that it holds its shape
  • Flour your counter or surface you will be working on 
  • Seal the pastry very well with a fork to avoid bursting out of the pastry.
  • Do not overfill the turnover
  • Brush with butter well hot so that cinnamon sugar will stick

Apple Pie Filling Inside Puff Pastry - Rolled In Cinnamon Sugar

Ingredients

  • 1 2 Sheet Box Puff Pastry Each Sheet Makes 4
  • 1 Can Apple Pie Filling
  • 2 egg whites used for brushing turnovers for browning
  • 1/8 Cup Cinnamon
  • 1/4 Cup Sugar
  • 2 tbsp butter melted brush on turnovers so cinnamon sugar sticks

Instructions

  • Preheat oven to 400°
  • Spray Baking sheet with nonstick spray or line with parchment paper or foil
  • Mix Sugar and Cinnamon together and set aside
  • Take your thawed puff pastry 1 sheet at a time ) unfold on a lightly floured surface -cut in 4 equal squares
  • Scoop a couple of table spoons of pie filling into the corner of each square sprinkle with cinnamon, Fold the pastry diagonally closing and crimping closed with a fork
  • Brush Each Pastry lightly with egg whites
  • Bale 17-20 minutes or until golden brown
  • Well still hot brush with melted butter and sprinkle with cinnamon sugar -to taste
  • Alternate method -sprinkle cinnamon sugar on pastry before baking and eliminate butter-however I love the melted butter

Apple Pie Cupcakes

You will find all the great flavors of an apple pie in these Apple Pie Cupcakes with brown sugar caramel frosting. This recipe is super easy to make since we used a store-bought cake mix and also store-bought pie filling.

We will probably be going a bit overboard with apple recipes this fall. My grandkids started school really early this year and since back to school always has fall on my mind, I have been baking like crazy.  I grew up in upstate NY and the school year never started until the after Labor Day. I really am not liking that they start in mid-August. I’m not ready for summer to be over. However, since the kids are back in school and the weather is feeling like fall I guess I might as well get my Apple and Pumpkin on. 

Hopefully, you have already tried my Pumpkin White Chocolate Chip Cookies or PUMPKIN CREAM CHEESE MUFFINS. In the near future, I hope to attempt a few actual pies ( that’s scary for us amateur bakers ) In the meantime if you have a craving for apple pie, these apple pie cupcakes will do the trick and are so easy to make.Apple Pie Cupcakes Making these cupcakes is a snap, all you need are a few baking staples.  For the cupcakes themselves, you will only need a yellow or white cake mix and what the directions call for ( usually oil, eggs, and water ) I used Pillsbury super moist white. You will also need a can of apple pie filling. For the delicious caramel brown sugar buttercream frosting, you will need -butter, brown sugar, powdered sugar, vanilla, Torani’s salted caramel syrup or caramel ice cream topping, milk or cream.

How to make these cupcakes :

  • Make Cupcakes as directed on box 

  • Cool completely 

  • With paring knife hollow out the center of the cupcake

    Replace just the top of the plug-frost the cupcakes.

Ingredients

  • 1 box Cake Mix yellow or white works best
  • 1 20 OZ Can of Apple Pie Filling

Frosting -

  • 1 cup Softened Butter
  • 3 cups Powdered Sugar
  • 1/2 cup Brown sugar
  • 1 tbsp Torani's Salted Caramel syrup
  • 2 tbsp Milk
  • 1 tsp Vanilla

Instructions

  • Preheat oven and line muffin tins with paper liners.
  • Prepare cupcakes according to box directions
  • Fill liners 2/3 full and bake according to box directions for cupcakes
  • Allow to cool completely.
  • Use a knife to dice apples into smaller pieces.
  • use a knife to core our a plug in the middle of each cupcake and fill with pie filling.
  • Place just the top of the plug back on the cupcake.
  • Make Frosting
  • Whip butter, brown sugar, caramel syrup, and vanilla until fluffy.
  • Gradually add powdered sugar.
  • Add milk until you reach your desired consistency.
  • Transfer to a pastry bag and frost each cupcake.

Our house is definitely a mostly chicken home. Leading me to share mostly chicken recipes CrockPot Creamy Mushroom Chicken Buffalo Chicken Tenders.  I love a good steak but the hubby rarely veers far from chicken.  We always ate mostly boneless skinless breasts because we thought that was the healthiest. It seemed no matter how  I prepared the breasts they always seemed to get dried out.

Well, we recently started buying bone-in skin-on thighs and wow! Thighs have so much more flavor.  Putting them in the instant pot makes them even moister. That’s what I really love about the instant pot, everything comes out so moist and delicious. How to Make Instant Pot Barbeque Chicken Thighs :

To make this quick weeknight meal (also great on the weekend.) You will need chicken thighs or drumsticks, I use bone-in skin-on. Your favorite barbeque sauce, store-bought or homemade, Salt, black pepper and chicken broth or water.

Optional add-ins are liquid smoke, garlic powder, onion powder, and apple cider vinegar.

Ingredients

  • 6-8 2.5 3 lbs chicken thighs or drumsticks bone-in, skin on
  • 1 bottle favorite barbeque sauce I made sugar free - recipe coming soon
  • salt and pepper to taste
  • 1 cup chicken broth water can be substituted
  • 2-3 drops liquid smoke optional
  • 1 tsp garlic powder optional
  • 1 tsp onion powder optional
  • 1 tbsp apple cider vinegar optional

Instructions

  • 1. Put 1 cup chicken broth and 3 drops liquid smoke (optional) place steamer basket or trivet
    in the steamer.
  • 2. Season both sides of chicken with salt and pepper layer chicken in the basket. Close the lid
    pressure cook at High Pressure for 8 minutes, Natural Release 10 minutes
  • 3. Spice up your store-bought barbeque sauce (if you choose) add garlic powder, onion
    powder, and apple cider vinegar
  • 4. Place chicken on a foil-lined baking sheet, generously apply your barbeque sauce
  • 5. Place chicken under the broiler on high for 5-10 minutes until chicken is browned and
    carmelized
  • 6. Serve and enjoy

When thinking of a feel-good sit down at the table with my family dinner, meatloaf is my go-to. Meatloaf was the first meal I ever cooked my husband. We were gonna cook Easter dinner together many years ago when we were just dating. I asked him what he wanted me to make and he said meatloaf. I have to say I was kind of shocked because I expected him to say ham or turkey.

Growing up Easter dinner always consisted of Ham or Turkey but turns out I found out later that he was trying to think of something simple that I couldn’t mess up.

The kids in the house were never big fans of plain old meatloaf so it never got made much well I was raising them.  If only I would have found this recipe for amazing stuffed meatloaf sooner.

They surely would have loved this stuffed meatloaf.  What’s not to love?  Everything is so much better with cheese. My husband is not a huge beef eater either. He definitely would prefer to eat chicken most of the time.  Therefore, we eat a lot of Buffalo Chicken Tenders and CrockPot Creamy Mushroom Chicken

He did, however, find this stuffed meatloaf very good.

Making this stuffed meatloaf is fairly easy.  All you will need is ground beef, bread crumbs, onion, mushrooms, cheese of choice, (I used mozzarella) garlic powder, salt, and pepper, tomato sauce or ketchup (optional). I also made a low carb version of this meatloaf in which I replaced the bread crumbs with almond flour and left off the tomato sauce.

Ingredients

  • 2 lbs ground beef ground turkey or chicken could be substituted
  • 1/2 cup bread crumbs or sub almond flour for low carb
  • 2 large eggs
  • 1/2 large onion chopped
  • 8 oz cheese of choice I used mozzarella
  • 1/2 tsp garlic powder
  • 1 4 oz can mushrooms
  • 1/2 cup tomato sauce leave off for low carb version

Instructions

  • Chop and sautee onions in a little olive oil or butter
  • In a large mixing bowl -mix ground beef, bread crumbs, eggs, and mushrooms
  • add onions and mix again
  • With 2/3-3/4 of the meat mixture, line a glass loaf pan, forming a cavity in the middle
  • add half of the cheese to the cavity
  • Top with the remaining meat mixture to cover the cavity and the cheese
  • Add the remaining cheese on top
  • Cover with foil and bake at 400° for 45 minutes
  • Take foil off, add tomato sauce to the top of the meatloaf
  • Bake another 15 minutes
  • Drain excess grease from meatloaf and let cool for 10-15 minutes before cutting

Tender Barbecue Pork Ribs Instant Pot /Grill

Well, I’m here to tell you that doing Tender Barbeque Pork Ribs On The Grill no longer has to be a 6 hr job. The secret is cooking them first in the instant pot.  Start with putting a dry rub on your ribs and putting them on the trivet in your instant pot.  If you don’t have a trivet, you can ball up aluminum foil (3-4 pies) set them in the bottom of the trivet. Put the pork ribs on top of the aluminum foil keeping them up off the bottom of the pot. Add water or broth. Set your instant pot for 30 minutes on manual high pressure.  Allow 10-minute slow release.

When the pork ribs come out of the instant pot they will already be so tender that they are falling off the bone. The ribs are now ready to put on the grill or smoker.  We use my husband’s Trager wood pellet smoker.  His smoker is his favorite toy he loves cooking everything on that thing. I definitely have no problem sharing the cooking.  If I can get him to do burgers or hot dogs or even corn on the smoker, I am all for it.

Once you get the pork ribs on the grill or smoker, they can be brushed with your favorite bottled barbeque sauce. If you are creative there are a lot of homemade barbeque sauce recipes.

Ingredients

  • 1/2 cup brown sugar for rub
  • 3 tbsp paprika for rub
  • 1 tbsp black pepper for rub
  • 1 tbsp kosher salt for rub
  • 1 tbsp garlic powder for rub
  • 1 tbsp onion powder for rub
  • 1 tsp mustard powder for rub
  • 1/2 tsp cayenne pepper for rub
  • 1/2 tsp chili powder for rub
  • 3-5 lbs pork back ribs
  • 1 13 oz barbeque sauce of choice

Instructions

  • Open ribs , rinse blood off , trim any excess fat (white film on meat) pat dry with paper towels
  • mix all ingredients for the dry rub in a mixing bowl. blending weel
  • generously rub the dry rub on the ribs
  • set ribs on the trivet in instant pot - you may choose to just bend the ribs and set in the instant pot or cut the ribs in sections
  • add 1 cup of water (or broth) to the instant pot -set manual pressure cook high for 30 minutes
  • let ribs slow release for 10 minutes-release any remaining steam and pull ribs from pot
  • put the pork ribs on preheated grill 250° smoke or grill for 30-35 minutes -enjoy!

These Buffalo Chicken Tenders are so good. They are low carb, keto-friendly and so quick and easy. A great weeknight meal.

Buffalo Chicken Tenders are my definite go to meal.  We  eat them all the time .  In the past I  always made them with french fries or onion rings  or sometimes cut  up on a salad. Buffalo Chicken Tenders  would also be great paired with my Creamy Coleslaw with Bacon . My husband was so happy when I discovered this recipe because now we could make our favorite quick meal again. Finding this low carb method of making Buffalo Chicken Tenders was a game changer.

 

 The secret to making Buffalo Chicken Tenders and sticking to a low carb life style is the  pork rinds.  Although they are great even if not eating low carb or keto.

Prior to starting my low carb journey ,  I was never a fan of pork rinds  . However I am finding they are great to use as breading on many things.  Just  throw them in a blender or I personally use my ninja and grind them up. Or you can also crush them with your hands in the bag if you don’t have a blender.  My personal favorites are the hot and spicy , you start off with a kick  to the Buffalo Chicken Tenders before you even add the sauce.  I also love the salt and vinegar pork rinds just for a snack when I am craving a salty snack like chips. They are sometimes harder to find though.

This Recipe for Buffalo Chicken Tenders is packed full of flavor.  I used a variety of ingredients including , pork rinds garlic powder  , red cayenne pepper , onion powder , salt, pepper and some hot sauce.  All adding to the tremendous flavor of  dish.

Personally I love to use a lot of spices in my recipes because not only do they add a lot of flavor , they also add health benefits.  Garlic powder is known to  help lower blood pressure , lower cholesterol and is an anti-inflammatory. Also Helps boost your immune system. Onion powder is known to benefit heart health  and is loaded with antioxidants.

 So lets get started making these delicious Buffalo Chicken Tenders. You will need boneless skinless chicken breasts cut in to thirds , or  buy the pre-cut tenders from the grocers freezer.

 Also  needed  pork rinds , paprika,garlic powder, onion powder ,black pepper,ground cayenne pepper, hot sauce , mayonnaise, eggs , and butter.

Buffalo Chicken Tenders

Quick Easy Low carb version of Buffalo Chicken Tenders
Course: Main Course

Ingredients

  • 6-8 Boneless Tenders
  • 2.5 Cups finely crushed pork rinds I use hot and spicy
  • 2 tsp paprika
  • 1 tsp garlic powder more or less to taste
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper less if you dont like them HOT
  • 3/4 cup hot sauce (divided) I use Franks
  • 1/4 cup mayonnaise
  • 2 eggs
  • 2 tbsp butter (I use salted but personal preference)
  • Ranch or Blue Cheese optional
  • chives optional

Instructions

  • Preheat oven to 425° degrees
  • Pat chicken dry using paper towels
  • In a small bowl whisk together crushed pork rinds, paprika,garlic powder,salt,onion powder, pepper and cayenne pepper. Transfer half of the dry ingredients to a shallow dish (pie dish works great) . Put other half a side for later.
  • In a separate mixing bowl whisk together 2 tbsp hot sauce , mayonnaise and eggs. One at a time dip the tenders into the egg mixture then dredge chicken in to dry mixture. Flipping chicken over multiple times until completely covered. Transfer breaded chicken to baking pan lined with parchment paper. After first half of dry ingredients have been used transfer remaining dry ingredients. This is done to avoid the dry ingredients getting clumped together after coming in contact with the egg mixture. Continue to breading chicken tenders.
  • Bake tenders for 25-30 minutes or until internal temp of 165°
  • well chicken is baking - In a medium sauce pan over medium heat stir butter into hot sauce until melted and hot. ( or use your favorite bottled buffalo sauce ) I love sweet baby rays. Toss tenders in sauce until fully coated. Serve with ranch, blue cheese and chives on the side. Celery is also always a good option.

                                                   Crock Pot  BBQ Shredded Chicken Sandwich

 

Easy shredded BBQ Chicken sandwiches  are an easy throw together meal. If  you are trying to find something that you can throw in a crock pot before you go to work and not worry about making dinner all day. This shredded chicken can also be made  a head of time to throw in the freezer for a later time. These BBQ shredded chicken sandwiches are always a hit.

Crock pot BBQ Shredded Chicken

3 boneless skinless chicken breasts
2 boneless skinless chicken thighs
1 cup of chicken broth
1 tsp salt
1 tsp pepper
1 tsp onion powder
1 tsp garlic powder

Ingredients

  • 3 Chicken Breast boneless skinless
  • 2 Chicken Thighs boneless skinless
  • 1 cup Chicken Broth
  • 1 tsp salt or to taste
  • 1 tsp pepper or to taste
  • 1 Tbsp Garlic Powder or to taste
  • 1 Tbsp Onion Powder or to taste

Instructions

  • Throw Chicken Breasts and Thighs in crock-pot (use  a liner for easy clean up)
    Add Chicken Broth ,salt,pepper,garlic powder and onion powder. Set crock pot temp to low for 6 hrs or high for 3 hrs. 
  • When chicken is done -shred with 2 forks and add your favorite bottled BBQ sauce or if you prefer use a favorite home made sauce. Scoop on to bun - ( I used an everything bun ) but good on any bun you choose

Do you have a favorite chicken Barbecue Recipe? I love Simple recipes.  I can throw  this in the crock pot in the morning , forget about it until dinner time.  However, if I forget I like that I now have the option of  throwing  in the Instant pot and being  ready in 30 minutes, even from frozen.

If you are looking for a low carb or keto option , ditch the bun , use a sugar free BBQ sauce ( jarred or made from 

scratch.  Add some deviled eggs or a  low carb veg like broccoli or asparagus on the side and you are good to go .
