Easy Cherry Coke Cupcakes so good. They start with a box cake mix ,add eggs oil and some cherry coke. After baking, frost with cherry coke flavored butter cream frosting and top with a cherry. Yum Yum !
Making cupcakes are always a fun easy dessert . These Cherry Coke ones are going to be great snack for the grandkids this week. I used Devils Food Cake mix , however you could use whatever flavor you choose. I have shared some fun cupcakes , with holidays coming up you should try Lucky Cupcakes With Irish Cream Frosting or Easter Bunny Cupcakes. They both are great . Strawberry Lemonade Cupcakes are delicious with spring coming also.
You can use any combination you would like. I thought Devils Food Cake went great with Cherry Coke.
Fresh cherries could be used , however be sure not to use any with pits.
They will stay fresh for several days in an airtight container on the counter or in the refrigerator. They will stay fresh in the freezer for several months if stored in airtight container.

- Cake Mix
- Eggs
- Oil
- Maraschino Cherries
- Cherry Coke
- Butter
- Powdered Sugar
- Vanilla Extract

- mixer, oven, baking pans
Ingredients
- 1 Box Devils Food Cake Mix
- 3 Eggs
- ½ cup Vegetable Oil
- 1 cup Cherry Coke
- ⅓ cup Maraschino Cherry Juice
- 24 Maraschino Cherries
Cherry Coke Buttercream Frosting
- 6 cups Powdered Sugar
- 1 ½ cups Butter softened
- 1 tsp Vanilla Extract
- 3 tbsp. Cherry Coke
- 1 tbsp. Cherry Juice
- 24 Maraschino Cherries
- 4-5 Drops Red Food Coloring
Instructions
- Pre-Heat Oven 350°
- Line muffin tin with paper liners
- Mix cake mix according to box directions - substituting Cherry Coke and Cherry Juice in place of water
- Fill cupcake liners ⅔ of the way -place a cherry in each cupcake
- Bake according to box directions
- Cool completely
Cherry Coke Buttercream Frosting
- Whip butter, cherry coke and cherry juice and vanilla extract until smooth
- Slowly add powdered sugar and 3-5 drops of red food coloring (optional)
- Fill pastry bag with frosting , and frost cupcakes -top with cherry
