Cupcakes are so versatile, you can decorate them to fit any occasion. Did you try my Easy Back To School Cupcakes or Candy Cane Cupcakes? Recently I shared Lucky Cupcakes With Irish Cream Frosting they were perfect with St. Patricks Day Coming.
With the exception of probably Christmas, Easter is my favorite holiday. With Easter usually comes Spring, although growing up in upstate NY, that wasn't always the case. There were plenty of years that it was still cold and even years that we had snow. However, in general, it meant spring was on its way. All things would be new again.
Now that I'm a mother and grandmother, the holidays are so special. My children and grandchildren all come for ham dinner with all the fixings. Extra Creamy Instant Pot Mac and Cheese will be on the menu for sure. For the past few years, I have made it a tradition to get all the kids their swimsuits and beach towels along with candy in their baskets.

How To Make Easter Bunny Cupcakes:
INGREDIENTS NEEDED
Cupcakes
- Boxed Cake Mix ( I used White Pillsbury )
- Eggs
- Oil
- Water
- Candy Eyes
- Marshmallows
- Sprinkles
Buttercream Frosting
- Butter
- Powdered Sugar
- Vanilla Extract
- Whipping Cream
INSTRUCTIONS
- Preheat Oven
- Make Cupcakes as Directed on Box
- Let Cool
- Mix butter, Sugar, Vanilla and Cream
- Put Frosting into a pastry bag and pipe bunny head
- Cut marshmallows in half for ears
- Put sticky side in pink sugar
- Add Eyes
- Use sprinkles for mouth and whiskers
Storage:
Cupcakes will keep several days in an airtight container

Equipment
- Mixing Bowl, serving bowl , spatula
Ingredients
- 1 Box Cake Mix I used White
- 3 Large Eggs
- ⅓ Cup Vegetable Oil Or as directed on box
- ½ Cup Water Or as directed on box
Butter Cream Frosting
- 1.5 Cups Butter
- 4 Cups Powdered Sugar
- 2 tsp Vanilla Extract
- ¼ Cup Whipping Cream
Garnishments
- 6 large Marshmallows Cut In Half Diagonally
- Pink Sanding Sugar
- 24 Eyes
- Pink Heart Sprinkles for Mouth
- Brown Jimmies (sprinkles) for Whiskers
Instructions
- Pre-heat oven and bake cupcakes as directed on box -cool
Butter Cream Frosting
- Beat butter with hand mixer or stand mixer on low until creamy (2-3 minutes)
- Slowly add powdered sugar ½ cup at a time on medium speed
- Mix in cream and Vanilla Extract
- Pipe Frosting on to Cup Cake Making Bunny Head
Ears nose and mouth
- Cut large marshmallows diagonally and dip sticky center in pink sanding sugar Stick into icing for ears
- Add Eyes , I used pink heart shaped sprinkles for the mouth and brown jimmies for whiskers
