It's that time of the year that I love making soup. Whether it's my Slow Cooker Clam Chowder or Instant Pot Vegetable Beef Soup there is nothing better on a chilly fall day. The inspiration for this recipe was found over on spendwithpennies.com. I changed it up a little to make it my own. Using precooked chicken that I happened to have made it extra quick. Rotisserie chicken would also be a great option.
Yes to make it in a slow cooker, I would put everything in the slow cooker and cook on low for 2-3 hours.
Sure boneless skinless breasts or thighs would work best. Cook in a frying pan or instant pot. If you put raw chicken in Crockpot extend the cooking time to 4-5 hours.
Soup will keep in the refrigerator in an airtight container for 4-5 days. In the freezer for 3-4 months.

- Onion
- Tomatoes
- Jalapenos
- Cumin
- Chili Powder
- Crushed Tomatoes with habaneros
- Chicken Broth
- Black Beans
- Canned Corn
- Cilantro
- Paprika
- Lime Juice
- Salt
- Pepper
Garnishes :
- Avocado or guacamole
- Sour Cream
- Cheddar Cheese
- Tortilla Strips ( I used store bought , however you can make your own if you prefer)

Ingredients
- 2 cups shredded chicken rotisserie works well
- 1 fresh jalapeno chopped and seeded
- 2 tsp minced garlic
- 1 onion diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 can diced tomatoes with habaneros or green chilis if you want it milder
- 1 large can crushed tomatoes
- 2 cups chicken broth
- 1 can (14.5 oz) black beans rinsed and drained
- 1 cup corn if using canned drain
- ¼ cup cilantro
- ¼ cup lime juice
Garnishes
- Tortilla Strips
- Sour Cream
- Cheddar Cheese
- Guacamole or sliced avocado
- Scallions
Instructions
- Heat olive oil in a large pot over medium high heat. Add onion, minced garlic and jalapeno cook until soft
- Add chicken , beans, tomatoes, corn and chicken broth and lime juice
- Stir in all remaining ingredients
- Simmer on medium low heat for 15-20 minutes until steaming hot
- Serve hot with tortilla strips and optional garnishes
