    Creamy Tomato Basil Soup Instant Pot

    Who doesn't love a good hot bowl of soup at any time of the year? However, in the winter this Creamy Tomato Basil Soup just seems to warm the soul! Give it a try, its ready in 30-40 minutes and is delicious.

    Soup is one of my favorite things to eat. Whether I am eating it ahead of my meal or as my meal, soup is always a great go-to. This  Creamy Tomato Basil Soup is great. If you aren't a fan of tomato soup. try Homemade Broccoli Cheddar Soup,, Bacon Cheeseburger Instant Pot Soup Low Carb Keto or Easy Country Chicken Noodle Soup, they are all great.

    This soup recipe was made in the instant pot, we love ours around here. We use it for Extra Creamy Instant Pot Mac and Cheese , Instant Pot Salisbury Steak and many other great recipes. I haven't tried making any desserts in it yet, but I plan to venture into that soon.  Accessories for making cheesecakes or pies need to be purchased first.

    Normally, if I want tomato soup, I'm a basic Campbell's girl. I usually prefer it made with water and served with grilled cheese on quality white bread and maybe a few saltines. When I started looking for soup recipes to make in the instant pot this one caught my eye.
    Soup in the Instant Pot
    Making this soup is fairly simple, it can be ready in 30-40 minutes. You can modify the recipe to fit your own personal preferences.
    I decided at the last minute to add the cream cheese and make it creamy. With or without it, it is great. I also garnished the soup with croutons and parmesan cheese, making it extra tasty.

    How to Make Creamy Tomato Basil Soup:

    INGREDIENTS NEEDED:

    • Onion ( I used red ) - diced
    • Carrots (diced)
    • Minced Garlic
    • Butter (I used salted)
    • Canned Diced Tomatoes
    • Tomato Paste
    • Chicken Broth ( Vegetable broth can be subbed to make it vegetarian )
    • Fresh or dried Basil
    • Oregano
    • Sugar (optional)
    • Salt and Black Pepper
    • Cream Cheese
    • Croutons (optional)
    • Parmesan Cheese (Optional)

    Directions :

    1.  Switch Instant Pot to Saute mode -Saute diced onions, garlic, and carrots in butter
    2. Add Broth, deglaze the pot with a spatula
    3. Add tomatoes, tomato paste, basil, salt, pepper, oregano, and optional sugar- stir well
    4. Seal Instant Pot Lid -close vent - set manual pressure on high for 15 minutes - use a natural release for 10 minutes-open lid
    5. Using an immersion blender mix well until pureed smooth
    6. Add cream cheese - mix  into soup -serve hot with optional garnishes

    If you don't have an immersion blender, soup can be blended in batches in a blender

    • Pressure Cooker
    • Immersion Blender

    Ingredients

    • 1 Medium Onion Diced ( I used red)
    • 2-3 Large Carrots Diced
    • 2 teaspoon Minced Garlic
    • 1 14 oz can Crushed Tomatoes
    • 1 7 oz can Tomato Paste
    • 1 14 oz can Chicken Broth
    • 1-2 teaspoon Sugar Optional
    • 1 -2 tablespoon Crushed Dried Basil Fresh can be subbed
    • ½ teaspoon Dried Oregano
    • Salt and Pepper to taste

    Instructions
