Meatloaf Stuffed Peppers are so good . A little mini meatloaf wrapped in a bell pepper, cooked in a skillet and cheese melted on top. This just might be a perfect weeknight meal .

Meatloaf is definitely probably one of my favorite meals . To me it is the ultimate comfort food . Although, this is not traditional meat loaf, it is similar to stuffed peppers. It differs from traditional stuffed peppers as it does not have rice and it is not a whole bell pepper. This meal is a great week night meal that can be thrown together in 30 or 40 minutes . Unfortunately I'm not lucky enough to have my own garden. However, I do have a very generous neighbor that does have a garden and he often shares his fresh vegetables with me. In a time that the world is so crazy its the little things that are so appreciated . The last time he gave me bell peppers is when I made the Easy Stuffed Pepper Soup which I absolutely loved. I did have to pick up peppers at the market for this current recipe but they were still delicious.
How to Make Meatloaf Stuffed Peppers :
INGREDIENTS NEEDED :
- Bell Peppers
- Ground Beef
- Parmesan Cheese
- Cayenne Pepper
- Minced Garlic
- Salt & Pepper
- Paprika
- Chopped Parsley
- Tomato Sauce ( tomato paste or no sugar added sauce for low carb/keto version)
- Mozzarella Cheese
- Bread Crumbs (sub pork rinds for low carb /keto version)

Meatloaf Stuffed Peppers
Equipment
- OVEN
- Skillet
- Cutting Board , Knife
Ingredients
- 3 large Bell Peppers
- 2 tablespoon Olive Oil
- 1 lb Ground Beef
- ¼ cup Shredded Parmesan Cheese
- 1 teaspoon Cayenne Red Pepper
- 1 tablespoon Minced Garlic
- ¼ teaspoon Salt or to taste
- ½ teaspoon Black Pepper or to taste
- 1 teaspoon Paprika
- 1 tablespoon Chopped Parsley
- ½ cup Tomato Sauce
- ½ cup Mozzarella Cheese
- 1 tablespoon Bread Crumbs
Instructions
- Pre-Heat Oven to 300°
- Cut the top and bottom sections off of the peppers and dice the end sections. Remove the core from center sections , this will be your pepper rings.
- In a bowl mix ground beef, garlic, parmesan cheese, bread crumbs , and diced peppers add salt, pepper, cayenne pepper, and paprika
- In a large skillet heat olive oil on medium high heat - place pepper rings in pan turn heat down and stuff rings with meat . Fry rings on both sides until meat cooks through 3-4 minutes each side
- Top each pepper ring with shredded cheese and put skillet in oven for 20-25 minutes until golden brown
- Let peppers sit for 5 minutes and serve
