Making this White Chicken Chili With Black Beans was very quick and easy. By using leftover rotisserie chicken, cream cheese, black beans, southwest corn, and a few other ingredients, it was so easy.
White Chicken Chili With Black Beans
Although I can wait for spring to get here, as long as its still winter and cold here in Ohio, I'm all about the soups. Whether I'm making Creamy Tomato Basil Soup Instant Pot, Slow Cooker Clam Chowder or Easy Country Chicken Noodle Soup on the stove, we usually have a pot of something going.
Normally if I want chili, it is all about the ground beef, kidney beans and tomato sauce with lots of chili powder, like my momma always made. That recipe is similar to the INSTANT POT CHILI that I shared a while back on the blog. However, a couple of months back, my daughter came and borrowed a crockpot. She said she was making white chicken chili. I have been thinking about it ever since. When I asked her for the recipe, she said she really didn't use one, but she used cream cheese for the base.
As luck would have it, the other day I had a rotisserie chicken left that needed to be used. Does everyone keep these chickens on hand as we do? Every time I go to Costco, I pick up a couple of whole chickens. They are great for so many things. In addition to just using them as a meal, which makes life so easy. My hubby is happy to eat them often with just a salad. My dogs get some in their dog dish mixed with dry food most nights. (yes I know, so spoiled). So I decided to grab the chicken out of the fridge and see what I could come up with for chicken chili.
How to Make White Chicken Chili With Black Beans :
INGREDIENTS NEEDED :
- Chicken (diced or shredded, I used Rotisserie)
- Chicken Broth
- Cream Cheese
- Black Beans
- Mexican Corn
- Onions (chopped white or yellow)
- Cilantro
- Jalapenos (diced)
- Chili Powder
- Garlic Powder
- Black Pepper
- Sea Salt
- Cumin
Optional Garnish
- Cheddar Cheese
- Green Onion
- Sour Cream
- Guacamole
- Fritos
INSTRUCTIONS
- In a saucepan over medium/high heat, heat shredded chicken and chicken broth, diced onion, and diced jalapeno until boil
- Reduce heat add in cubed cream cheese, stirring constantly until melted
- Stir in black beans and corn
- Add-in Chili powder, pepper, salt, garlic powder, and cilantro and cumin
- Simmer until hot and thickened
- Serve with desired garnishes

- 2 cups Chicken Broth
- 2 8 oz Blocks Cream Cheese Cubed
- ½ medium onion Diced
- 1 bunch Fresh diced cilantro
- 1 14 oz Can Black Beans
- 1 14 oz Can Mexican or Sante Fe Corn (with beans and red pepper mixed in)
- 2 tablespoon Chili Powder
- 1 Fresh Jalapeno Diced with seeds
- 1 teaspoon Garlic Powder
- 1 teaspoon Black Pepper
- ½ teaspoon Sea Salt or to taste
- ½ teaspoon Cumin
Garnishes (optional)
- 1 Table spoon Cheddar Cheese
- 1 teaspoon Green Onion
- 1 teaspoon Sour Cream
- 1 teaspoon Guacamole
- ½ cup Fritos Corn Chips

This seems to be super-yummy comfort food. I love chili, but have never tried it with chicken, but will try this one, it looks delicious!
