Sugar Cookie Cherry Pie Bars
The cherry bars are perfect. With a sugar cookie crust that is sweet and just a little crispy. Using a bagged sugar cookie mix for the crust and canned cherry topping makes it so easy. If you follow me you probably realize that I love using cherry pie filling to make quick desserts. Have you tried Cherry Poke Cake or my Easy Chocolate Cherry Brownies ? Both are delicious and easy to throw together. If you take any of these options to a pot luck or party. I'm sure you are going to be a hit.
I'm not going to lie, I pretty much ate the whole pan of these pie bars over the weekend. They were so good with the sweet crust and the filling being a little bit tart. I love that they are part cookie and part pie. Haha. Do you have a favorite pie? Cherry is definitely up there for me. Although during the summer, my favorite is probably Rootbeer Float Pie.
So grab a sugar cookie mix and a can of pie filling and you will be ready to roll.
How to Make Sugar Cookie Cherry Pie Bars:
INGREDIENTS NEEDED :
- Sugar Cookie Mix
- Egg
- Butter
- Vanilla Extract
- Cherry Pie Filling
INSTRUCTIONS :
- In a medium bowl, whisk the egg. Stir in contents of sugar cookie mix pouch and melted butter. Mix until a thick dough forms. Remove ¾ cup of dough to a smaller bowl and set aside.
- Press remaining dough into a greased 9x9 square baking pan. In a separate bowl, stir together cherry pie filling and vanilla extract. Spread the topping over sugar cookie dough in a baking dish
- Break up remaining dough into small chunks and sprinkle over top of cherry pie filling. Bake at 375 for 20-30 minutes, or until edges are golden brown. Cool before slicing and serving.

Hi Jean , it just a simple dough made with flour , sugar ,salt baking soda-water - most often used for christmas cookies - hope that helps

Hi, Iduna,I freeze everything. I think they will be fine as long as you keep them airtight so they dont get freezer burnt.
