Carrot Cake With Cream Cheese Frosting
I was happy to try making this carrot cake from scratch. Usually, I take the easy way out and use a cake mix as in Easter Bunny Butt Cake and Cherry Poke Cake. Although this from scratch recipe was fairly easy, I will still probably continue to use mixes for most of my cake recipes.
This Easter is going to be so odd with all that is going on with the corona pandemic and the shelter in place. My kids and grandkids won't be able to come for dinner and dessert as they normally do. However, once this social distancing stuff is over, it is my plan to celebrate big time.
Yes it definitely could be made in a different pan.
You could for sure use a different frosting if you prefer. However cream cheese frosting goes so well with Carrot Cake.
This cake will keep in an airtight container in the refrigerator for 4-5 day. If put in the freezer for several months.
How to Make Carrot Cake With Cream Cheese Frosting :
INGREDIENTS NEEDED :
- All-Purpose Flour
- Baking Powder
- Baking Soda
- Cinnamon
- Nutmeg
- Ginger
- Salt
- Vegetable Oil
- Eggs
- Brown Sugar
- Granulated Sugar
- Unsweetened Applesauce
- Vanilla Extract
- Carrots
- Raisins
- Walnuts
CREAM CHEESE FROSTING :
- Cream Cheese
- Unsalted Butter
- Powdered Sugar
- Vanilla Extract
- Cream or Milk
INSTRUCTIONS :
- Pre-Heat Oven
- Whisk together in a mixing bowl flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt when well combined -set aside
- In a separate large bowl, whisk together vegetable oil, eggs, brown sugar, granulated sugar, applesauce, vanilla extract, raisins, and walnuts
- Blend wet ingredients into dry ingredients -mix- do not over blend
- Pour batter into the well-greased and floured round cake pans
- Bake and cool on a cooling rack

- In a stand mixer with a paddle attachment or in a large bowl and a hand mixer beat cream cheese until smooth.
- Next, add the butter and mix for 1 minute or until smooth. Slowly add powdered sugar
- Next, add vanilla and cream

- 2 cups all -purpose flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- ½ tsp ground ginger
- ¼ tsp nutmeg
- ½ teaspoon salt
- ¾ cup vegetable oil
- 4 large eggs
- 1.5 cups brown sugar
- ½ cup granulated sugar
- ½ cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 3 cups grated carrots
- ¾ cup walnuts (or pecans) chopped
- ¾ cup raisins
Cream Cheese Frosting
- 1 8 oz block cream cheese softened
- ½ cup unsalted butter softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1 tablespoon cream or milk

- Pre-Heat Oven to 350° Spray pans with food release and flour Whisk together in a mixing bowl flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt when well combined -set aside
- In a separate large bowl, whisk together vegetable oil, carrots, eggs, brown sugar, granulated sugar, applesauce, vanilla extract, raisins, and walnuts
- Blend wet ingredients into dry ingredients -mix- do not over blend
- Pour batter into the well-greased and floured round cake pans
- Bake for 30-35 minutes or until tooth pick is dry when stuck into cake. Cool on a cooling rack

- In a stand mixer with a paddle attachment or in a large bowl and a hand mixer beat cream cheese until smooth.
- Next, add the butter and mix for 1 minute or until smooth. Slowly add powdered sugar
- Next, add vanilla and cream
- Assemble cake
- Frost cake and add optional nuts on sides (tilt cake slightly with a pan under to catch falling nuts)
- I made the carrots out of orange and green frosting ,(see link below) candy carrots are also an option
- Cut and Serve
