These Springtime Lemon Bars were delicious and so easy to make. I guarantee you will be a hit. Made with fresh lemon juice, lemon zest, and fresh strawberries. Add a dusting of powdered sugar and yum !.
Serve them up at your next pot luck or dish to pass gathering. They are sure to be a hit. If you want to make a short cut version try using a lemon cake mix and add the confectioner's sugar dusting and the sliced strawberries. My family loved these and polished them off very quickly. How to Make Springtime Lemon Bars
INGREDIENTS NEEDED
- Flour
- Sugar
- Butter (Softened)
- Eggs (Beaten)
- Powdered Sugar
- Lemon Juice
- Lemon Zest
- Baking Powder
- Fresh Strawberries
INSTRUCTIONS FOR MAKING BARS:
- Preheat Oven to 350
- In a mixing bowl combine softened butter,1 cup flour and confectioners sugar and mix until combined
- Next, press the mixture into a well-greased 8 x 8-inch baking dish
- Bake for 20 minutes
- Meanwhile, well crust is baking -in a medium bowl combine 2 beaten eggs with sugar, salt, lemon juice, and lemon zest and mix well until combined. In a separate small bowl mix baking powder and remaining 2 tablespoons of flour - combine dry mixture to egg mixture and mix well.
- Now carefully remove your original baking dish from the oven. Pour egg mixture over top and put back in the oven and bake for an additional 20-25 minutes
- Allow to completely cool before cutting into bars. Finish them off by sprinkling with confectioners sugar and arrange fresh strawberry slices on each bar. You are sure to be a hit with this delicious dessert. Store any leftovers in an airtight container in order for it to retain the fresh flavor.

- 8-10 Strawberries Thinly Sliced
