    Caramel Apple Granny Cheesecake Bars made with granny smith apples are so good.  A favorite fall dessert . Combining my favorite apples with cheesecake , caramel topping and oats. Your family or guests are sure to love them.

    When you try these Caramel Apple Cheese Cake Bars you are going to think you have stumbled across a little piece of heaven.     These cheesecake bars do take a little longer than most of the quick desserts I like to share. However they are definitely worth the extra time and effort. I promise they wont disappoint.

    How to Make Caramel Apple Granny Cheesecake Bars:

    INGREDIENTS NEEDED:

    CRUST

    • Flour
    • Brown Sugar
    • Butter

    CHEESECAKE

    • Cream Cheese Softened
    • Granulated Sugar
    • Vanilla Extract
    • Eggs

    APPLES

    • Granny Smith Apples peeled and chopped
    • Granulated Sugar
    • Cinnamon

    STREUSEL TOPPING

    • Flour
    • Brown Sugar
    • Oats
    • Cold Butter
    • Caramel Topping

    Can I Use Different Apples ?-

    You absolutely can use apples of you choice

    CAN I FREEZE THESE CARAMEL APPLE CHEESECAKE BARS?

    You sure can. Just like most cheesecakes, this recipe freezes well. However, I would keep caramel separate and add when serving.

    Caramel Apple Granny Cheesecake Bars

    Equipment

    • OVEN
    • Electric Mixer
    • Mixing Bowl, serving bowl , spatula

    Ingredients

    Crust

    • 2 cups all-purpose flour
    • ⅔ cup brown sugar
    • 1 cup butter cold (2 sticks) cubed

    Cheesecake

    • 2 8 oz pkg cream cheese
    • ¾ cup granulated sugar
    • 1 teaspoon vanilla extract
    • 2 large eggs

    Apples

    • 3-4 granny smith apples , peeled and chopped small
    • 2 tbsp s granulated sugar
    • 1 teaspoon cinnamon

    Streusel Topping

    • ¾ cup all-purpose flour
    • ¾ cup brown sugar
    • ½ cup quick oats (oatmeal)
    • 6 tbsp s cold butter
    • ½ cup caramel topping

    Instructions

    • Preheat oven to 350 degrees. Spray a 9x13 baking pan with cooking spray. Set aside
    •  In a small bowl, combine flour, brown sugar, and cold cubed butter. Use a pastry cutter or hands to mix until crumbly. Press into the baking pan. Bake 16-20 minutes or until lightly browned. 
      Crumbly Crust
    • In a separate bowl combine all the cheesecake ingredients (cream cheese, sugar, vanilla, and eggs) and beat together until smooth and combined. 
    • In a small bowl, combine the peeled and chopped apples with the sugar, cinnamon. Mix together until the apples are coated.
    • Pour the cheesecake mixture over the cooked crust and spread out evenly. Sprinkle the apples over the cheesecake.
    • Prepare the streusel topping by combining all the ingredients . Use your hands or a pastry cutter to combine until crumbly like wet sand. Spread it evenly over the apples.
    • Cook for 25-30 minutes. The edges should be done and slightly pulled away from the edges of the pan. The middle should be soft set but not runny 
    • Remove from oven and put on a cooling rack. Drizzle the caramel sauce over the bars and let cool at room temperature for 1 hour. Cover the dish and put in the refrigerator for 3 hours. Cut into bars and serve. Store leftovers in the fridge. I use ice cream topping and put extra on when served.
