Jalapeno Popper Bacon Cheddar Chicken Breast
This is chicken dish is fantastic with pork rind breading as we made it if you are eating low carb. However you could use any bread crumb coating if you are not concerned with keeping the carb count low. We eat a lot of chicken in our house , some low carb and some not. I have shared several. Did you try my Buffalo Chicken Tenders or Slow Cooker Chicken Cacciatore ? If you haven't, I highly suggest you do. Both are great recipes and easy to make.
In the past when I used pork rinds for breading on things , I just bought bags of rinds and ground them up in the food processor or blender. However, my husband found a place on line or through amazon that he ordered it pre-ground. It was great just like using regular bread crumbs. They had several different flavors . We used the spicy hot ones I believe. I have to admit he did most of the work and I watched and took pictures lol.
How to Make Jalapeno Popper Bacon Cheddar Chicken Breast :
INGREDIENTS NEEDED :
- boneless skinless chicken breasts
- fresh jalapenos with seeds
- cheddar cheese
- bacon crumbled
- green onions
- lime juice
- spicy pork rinds

Jalapeno Popper Bacon Cheddar Chicken Breast
Equipment
- , oven, baking pans
Ingredients
- 4 Boneless Skinless Chicken Breasts
- 1 8 oz Cream Cheese
- ½ cup Cheddar Cheese
- ½ Cup Crumbled Bacon
- 3 Fresh Jalapenos With or with out seeds depending on how hot you like it
- ¼ cup Green Onions chopped fine
Liquid
- ¼ cup Olive Oil
- 2 tbsp's Lime Juice
Breading
- 1 cup Ground Pork Rinds I used Spicy Hot
Instructions
- Pre-Heat Oven 375°
- Spray baking dish with food spray
- Pound out chicken making it approximately ½ thick
- In a mixing bowl combine softened cream cheese , crumbled bacon, cheddar , diced jalapeno,diced green onion
- Spread cream cheese mixture onto chicken breast and roll chicken breast tightly - you can keep closed with tooth pick and remove later or wrap tightly in saran wrap and refrigerate for 15-20 minutes and it should stay together.
- Combine ¼ cup olive oil and lime juice and brush on the chicken breasts
- Put pork rinds in a shallow dish and roll chicken breasts in the rinds after wetting in oil mixture . Place Chicken in baking dish.
- Sprinkle with optional parsley and bake for 30-35 minutes or until it reaches internal temperature of 165°
- Let set for 5 minutes before serving
