One Pan Chicken Fajita Pasta
This one-pot weeknight dinner is absolutely delicious. Combining my two favorite things spicy Mexican flavor along with the pasta. The fact that it can all be cooked in one large skillet makes it even better. Making for less clean up after the fact. Mexican meals are my favorite to make. Have you tried Easy Beef Enchiladas or Easy Sheet Pan Fajitas? Both are fantastic. With chicken, peppers, onions , cheeses a few spices, and pasta of your choice this meal is easy and quick to make. ( I used low carb pasta to cut calories and carbs )
How to Make One-Pan Chicken Fajita Pasta :
INGREDIENTS NEEDED :
- Boneless Skinless Chicken Breasts
- Olive Oil
- Butter
- Diced Red Onion
- Diced Red, Green and Yellow Peppers
- Minced Garlic
- Salt
- Black Pepper
- Cayenne Pepper
- Paprika
- Cumin
- Chicken Stock
- Whole Whipping Cream
- Cream Cheese
- Cheddar Cheese
- Green Onions
- Pasta of Choice
INSTRUCTIONS :
- In a Large Skillet or Dutch Oven, heat 2 tablespoon Olive Oil on Medium-High Heat
- Add Chicken Breasts to Pan - Cook 6-7 minutes on each side -Remove Chicken and set aside
- Add Onions and Peppers and Garlic To Pan With Butter Cook for 3-4 Minutes
- Chop Chicken and Add Back To Pan
- Next, Add all the Dry Spices and stir In
- Pour In Chicken Broth and heavy cream Bring to Boil
- Reduce Heat Mix in Cream Cheese and Cheddar Cheese
- Add Pasta - Simmer For 15-20 -when Pasta is Tender and Sauce is Thickened it is Ready to Serve
- Garnish With Green Onions
OPTIONAL STIR INS OR TOPPINGS :
- Add Jalapenos for a little extra kick
- Top With Sour Cream or Guacamole
GREAT SUBSTITUTIONS :
- I'm sure this would be great made with steak or even ground beef
- If you don't have pasta try stirring in some rice
Storage :
- This pasta will keep 3-4 days in an airtight container in the refrigerator
- Reheat in the microwave, my favorite kind of leftovers
