    Mexican Street Corn (Elote)

    Mexican Street Corn also which is also known as Elote is so good. Corn on the cob cooked on the grill or in a cast-iron skillet, slathered in mayonnaise and covered in cheese. Can you say delicious?

    Mexican Street Corn

    Whether you are looking for a great side dish for Cinco de mayo or just for a picnic or pot luck, this corn is perfect. Some other great options for Cinco de Mayo are Sheet Pan Chicken Nachos, Skinny Blackberry Margarita and The Best Skinny Jalapeno Margarita. Unfortunately, we probably won't be going out for Mexican food this year. However, there is no reason you cant have a Mexican feast at home.

    Elote

    What is Mexican Street Corn?        https://en.wikipedia.org/wiki/Mexicanstreet_     also known as elote en vaso (little corn-cup) is a Mexican snack or antojito. Shops and market stalls selling corn also tend to sell esquites. The word esquites comes from the Nahuatl word ízquitl, which means "toasted corn".

    How to Make Mexican Street Corn (Elote)-

    INGREDIENTS NEEDED

    • Corn on the cob
    • Mayonaise
    • Chili Powder
    • Cotija Cheese (Mexican soft cheese found in  the dairy section at the  grocery)
    • Lime Wedges
    • Fresh Cilantro

    DIRECTIONS

    1. Husk Corn (or buy pre husked)
    2. Cook on grill or in a frying pan (I used cast iron skillet and butter) till slightly charred
    3. Brush with mayo
    4. Sprinkle or roll in cheese
    5. Shake Chili powder, cilantro
    6. Serve with optional lime wedges

    Equipment

    • Grill or Frying Pan

    Ingredients

    • 6 Ears Corn Husked and Cleaned
    • ½ Cup Mayonaise
    • 2 teaspoon Chili Powder
    • ½ Cup Grated Cotija Cheese or other soft cheese of choice
    • 2 tablespoon Fresh Cilantro finely chopped
    • 6 Wedges Of Lime Optional Garnish

    Instructions

    • Husk and Clean Corn
    • Grill Corn til Slightly Charred (I used Butter)
    • Slather with Mayonaise
    • Sprinkle or Roll in Cheese
    • Shake Cilantro and Chili Powder on Corn
    • Salt, Pepper,and Butter to taste
    • Serve with Optional Lime Wedges and margarita of choice (ha ha)
