Mexican Street Corn (Elote)
Whether you are looking for a great side dish for Cinco de mayo or just for a picnic or pot luck, this corn is perfect. Unfortunately, we probably won't be going out for Mexican food this year. However, there is no reason you cant have a Mexican feast at home.

How to Make Mexican Street Corn (Elote)-
INGREDIENTS NEEDED
- Corn on the cob
- Mayonaise
- Chili Powder
- Cotija Cheese (Mexican soft cheese found in the dairy section at the grocery)
- Lime Wedges
- Fresh Cilantro
DIRECTIONS
- Husk Corn (or buy pre husked)
- Cook on grill or in a frying pan (I used cast iron skillet and butter) till slightly charred
- Brush with mayo
- Sprinkle or roll in cheese
- Shake Chili powder, cilantro
- Serve with optional lime wedges

- 6 Ears Corn Husked and Cleaned
- ½ Cup Mayonaise
- 2 teaspoon Chili Powder
- ½ Cup Grated Cotija Cheese or other soft cheese of choice
- 2 tablespoon Fresh Cilantro finely chopped
- 6 Wedges Of Lime Optional Garnish
Instructions
- Husk and Clean Corn
- Grill Corn til Slightly Charred (I used Butter)
- Slather with Mayonaise
- Sprinkle or Roll in Cheese
- Shake Cilantro and Chili Powder on Corn
- Salt, Pepper,and Butter to taste
- Serve with Optional Lime Wedges and margarita of choice (ha ha)
