This pineapple dessert is so sweet and fluffy and delicious, you will think you've died and gone to heaven. I have been totally focusing on all the yummy summertime desserts. Last week I shared Rootbeer Float Pie and have been thinking about my Mile High Strawberry Jello Pie it is one of my all-time favorites.
It has been such an odd few weeks with everyone in isolation and our country in a state of emergency. However, with as scary as it's been, it has given me the time and opportunity to reflect on how blessed my life has been, It has been really quiet around here without my kids or grandkids being around. However, my dogs are keeping me company and helping me try new recipes. (more on that later).Hope to have a lot of new ones coming soon. 2020 is going to be our year. We will get this blog rolling. But now make to this current yummy dessert.
How to Make Pineapple Coconut Dream :
INGREDIENTS NEEDED :
Crust
- Golden Oreos
- Unsalted Butter
Topping
- Powdered Sugar
- Unsalted Butter
- Cream Cheese Softened
- Cool Whip
- Crushed Pineapple
- Coconut

Equipment
- Refrigerator
- Electric Mixer
- Mixing Bowl, serving bowl , spatula
Ingredients
Golden Oreo Crust
- 32 Golden Oreos
- ½ Cup Melted Unsalted Butter
Topping/Filling
- 2 Cups Powdered Sugar
- ½ Cup Unsalted Butter Softened
- 4 oz Cream Cheese Softened
- 1 8 oz Tub Cool Whip
- 1 20 oz Can Crushed Pineapple Drained Well
- 1 Cup Shredded Sweetened Coconut
Instructions
- Crush Golden Oreos (filling and all)
- Melt butter - swirl around in baking dish to grease - then stir into oreo crumbs - blending well
- Press crust mix into baking dish -chill in the refrigerator for 30 minutes
Filling/Topping
- Beat cream cheese and butter in a mixing bowl with electric mixer on medium-high until creamy- turn the mixer to low and slowly add powdered sugar 1 cup at a time. Turn the mixer up to high and beat for 1 minute -add 2 tablespoon of crushed pineapple stir well
- With a spatula spread cream and pineapple mixture over golden oreo crust
- Fold remaining pineapple into the cool whip and spread over cream cheese mixture ,spread coconut over top
- Chill for at least 4 hours in refrigerator
- Garnish with maraschino cherries - serve and enjoy
