Ingredients

  • 4 Chicken Thighs
  • 2 tablespoon Olive Oil
  • ½ teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Minced Garlic
  • Parsley

Instructions

  • Preheat oven to broil -high. Move the rack to the middle of the oven.
  • Grease an 8x8 baking dish. Place chicken thighs in the dish, skin side up.
  • In a small bowl whisk together olive oil, lemon juice, salt, pepper, and garlic
  • Brush oil mixture onto chicken. Save some for basting later.
  • Broil for 20-25 minutes basting and turning halfway through.
  • Chicken is done when internal temperature reaches 165°
  • Let sit for 5 minutes before serving
  • Garnish with Parsley.
