Ingredients

  • 3 large Bell Peppers
  • 2 tablespoon Olive Oil
  • 1 lb Ground Beef
  • ¼ cup Shredded Parmesan Cheese
  • 1 teaspoon Cayenne Red Pepper
  • 1 tablespoon Minced Garlic
  • ¼ teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 1 teaspoon Paprika
  • 1 tablespoon Chopped Parsley
  • ½ cup Tomato Sauce
  • ½ cup Mozzarella Cheese
  • 1 tablespoon Bread Crumbs

Instructions

  • Pre-Heat Oven to 300°
  • Cut the top and bottom sections off of the peppers and dice the end sections. Remove the core from center sections , this will be your pepper rings.
  • In a bowl mix ground beef, garlic, parmesan cheese, bread crumbs , and diced peppers add salt, pepper, cayenne pepper, and paprika
  • In a large skillet heat olive oil on medium high heat - place pepper rings in pan turn heat down and stuff rings with meat . Fry rings on both sides until meat cooks through 3-4 minutes each side
  • Top each pepper ring with shredded cheese and put skillet in oven for 20-25 minutes until golden brown
  • Let peppers sit for 5 minutes and serve
