Ingredients

  • ½ cup Butter
  • ½ cup White Sugar
  • 2 Eggs
  • ½ cup Sour Cream
  • 1 teaspoon Vanilla Extract
  • 2 teaspoon Grated Lemon Peel
  • ½ teaspoon Salt
  • ½ teaspoon Baking Soda
  • 3 tablespoon Lemon Juice
  • 2 cups Powdered Sugar

Instructions

  • Pre-heat Oven to 325°
  • With an electric mixer beat butter and sugar until light and fluffy. Add eggs one at a time, allowing each to mix in before adding the next.
  • Beat in sour cream, vanilla extract, and lemon peel.
  • In a separate bowl combine flour, cornstarch, salt, and baking soda
  • Blend the dry mixture into the wet.
  • Pour into well- greased and floured loaf pan.
  • Bake in preheated oven for 30-35 minutes or until toothpick comes out clean.

Lemon Glaze

  • Whisk together lemon juice and powdered sugar. Pour- over hot cake and allow to cool until the glaze is soaked in.
