Ingredients
45 oz.Chicken Breasts boneless, skinless
3tbsp.Lime Juice
1tablespoonChili Powder
1teaspoonCumin
2tablespoonOlive Oil
1tablespoonHoney
1teaspoonMinced Garlic
1tablespoonChopped Cilantro
½teaspoonSalt
Salsa Ranch
¼cupRanch Dressing
¼cupSalsa
2tablespoonSour Cream
1teaspoonLime Juice
1tablespoonChopped Cilantro
1cupShredded Jack Cheese
Instructions
Pre-heat oven to 350°
Get 4-5 boneless skinless chicken breasts -pound out to around 1 inch thick.
Whisk together all ingredients for the marinade( lime juice, chili powder, oil, honey, garlic, salt, pepper, cilantro) in a bowl or shake together in a freezer bag. Add chicken to the marinade and refrigerate for at least 30 minutes.
Remove chicken from bag or bowl, shake off excess marinade place in a 13 x9 baking dish ( I spray with food release) Leave a little space between the chicken.
Bake chicken for 20 minutes
Mix together salsa ranch ingredients. Spoon 2 tablespoons of the ranch on each breast. Sprinkle ¼ cup of shredded cheese on top of each chicken breast. Return to oven for 5-10 minutes until golden brown.
Serve on tortilla strips or rice. Top with sour cream, guacamole, salsa, pico de gallo, or any other garnishes you please.
