Classic Easy Stove Top Minestrone Soup

Ingredients

  • 2 teaspoon Olive Oil
  • 1 Onion Diced
  • 1 cup Carrots Diced
  • ½ cup Celery Diced
  • 2 Cloves Minced Garlic
  • 4 cups Chicken or Vegetable Broth
  • 1 14 oz. can Tomato Sauce
  • 1 7 oz. can Tomato Paste
  • ½ teaspoon Oregano
  • 1 Sprig Fresh Rosemary
  • 2 Bay Leaves
  • 2 tbsp. Fresh Basil
  • ¼ cup Fresh Parsley
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Salt
  • 2 cups Pasta I used low carb elbows
  • ¼ cup Parmesan Cheese Garnish

Instructions

  • In a large soup pot or Dutch oven , add olive oil sauté onion, garlic, celery, carrots for 5-10 minutes until soft and fragrant
  • Add Liquid ingredients - Broth , tomato sauce , tomato paste , stirring well
  • Next stir in all of the spices and zucchini bring to boil(
  • Turn down to low and let simmer10-15 minutes
  • Add pasta last 8-10 minutes or cook pasta on side and add when served
  • When hot and zucchini is tender - Remove bay leaves and rosemary - serve in bowls - garnish with parmesan cheese
