Classic Easy Stove Top Minestrone Soup

- 2 teaspoon Olive Oil
- 1 Onion Diced
- 1 cup Carrots Diced
- ½ cup Celery Diced
- 2 Cloves Minced Garlic
- 4 cups Chicken or Vegetable Broth
- 1 14 oz. can Tomato Sauce
- 1 7 oz. can Tomato Paste
- ½ teaspoon Oregano
- 1 Sprig Fresh Rosemary
- 2 Bay Leaves
- 2 tbsp. Fresh Basil
- ¼ cup Fresh Parsley
- ½ teaspoon Garlic Powder
- ¼ teaspoon Salt
- 2 cups Pasta I used low carb elbows
- ¼ cup Parmesan Cheese Garnish
In a large soup pot or Dutch oven , add olive oil sauté onion, garlic, celery, carrots for 5-10 minutes until soft and fragrant
Add Liquid ingredients - Broth , tomato sauce , tomato paste , stirring well
Next stir in all of the spices and zucchini bring to boil(
Turn down to low and let simmer10-15 minutes
Add pasta last 8-10 minutes or cook pasta on side and add when served
When hot and zucchini is tender - Remove bay leaves and rosemary - serve in bowls - garnish with parmesan cheese
