Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp salt
  • 1 cup softened butter
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1 9 oz bag peppermint truffles

Instructions

  • Pre-heat Oven to 375°
  • In a small mixing bowl combine flour, baking soda and salt -set a side
  • In a separate bowl beat butter, granulated sugar, brown sugar vanilla extract and peppermint until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture.
  • Stir in truffles and optional nuts if you are adding them
  • Drop by rounded spoonful on ungreased cookie sheet - bake 9-11 minutes
  • Move cookies to cooling rack
  • Serve when cooled
