Ingredients

  • 2 cups shredded chicken rotisserie works well
  • 1 fresh jalapeno chopped and seeded
  • 2 tsp minced garlic
  • 1 onion diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 can diced tomatoes with habaneros or green chilis if you want it milder
  • 1 large can crushed tomatoes
  • 2 cups chicken broth
  • 1 can (14.5 oz) black beans rinsed and drained
  • 1 cup corn if using canned drain
  • ¼ cup cilantro
  • ¼ cup lime juice

Garnishes

  • Tortilla Strips
  • Sour Cream
  • Cheddar Cheese
  • Guacamole or sliced avocado
  • Scallions

Instructions

  • Heat olive oil in a large pot over medium high heat. Add onion, minced garlic and jalapeno cook until soft
  • Add chicken , beans, tomatoes, corn and chicken broth and lime juice
  • Stir in all remaining ingredients
  • Simmer on medium low heat for 15-20 minutes until steaming hot
  • Serve hot with tortilla strips and optional garnishes
