4Chicken Breastspound chicken to approximately ½ inch thick
2large OnionsSliced
2Tablespoons Olive Oil
2Tablespoons Butter
2Tablespoons Flour
2cupsBeef Broth
2teaspoonsItalian Seasoning
Salt and Pepper to Taste
4SlicesProvolone Cheese
4SlicesWhite Cheddar or Swiss Cheese
Instructions
Cooking the Chicken
In a large skillet over medium high heat add the olive oil and sliced onions. Sauté until caramelized 6-8 minutes. Remove from pan and set aside .
Add in the chicken breasts and cook on each side for 3-4 minutes or until no longer pink. Set aside with the onions.
Add the butter and let it melt ,whisk in the flour . Add the beef broth ,Italian seasoning and salt and pepper to taste. Let simmer for 2-3 minutes until it starts to thicken
Reduce heat to low and add chicken and onions back into pan . Top with cheeses - Broil for 1-2 minutes until golden brown. Parsley for garnish
