Easy Stuffed Pepper Soup

- 1 tablespoon olive oil
- 1 lb ground beef
- ½ cup chopped white onion
- 2 teaspoon minced garlic
- 2 green bell peppers chopped in 1 inch pieces
- 1 red bell pepper chopped in 1 inch pieces
- 1 small orange bell pepper chopped in 1 inch pieces
- 2 14.5 oz cans crushed tomatoes I used 1 with habenaros
- 1 15 oz tomato sauce
- 2 teaspoon tsp Italian seasoning
- 1 14.5 can beef broth
- 2 cups rice I used brown /white is fine
- 2 tablespoon parsley
- salt and pepper to taste
In a pot over medium heat ,heat olive oil. Add ground beef and cook until browned ,breaking up well.
Add onion and garlic and cook for 4-5 minutes
Next add the peppers to the pot and cook for 3-4 minutes .
Add tomatoes,tomato sauce,beef broth,Italian seasoning and salt and pepper-bring to boil
Turn down and simmer for 20-30 minutes
Meanwhile cook rice separately
