Easy Stuffed Pepper Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • ½ cup chopped white onion
  • 2 teaspoon minced garlic
  • 2 green bell peppers chopped in 1 inch pieces
  • 1 red bell pepper chopped in 1 inch pieces
  • 1 small orange bell pepper chopped in 1 inch pieces
  • 2 14.5 oz cans crushed tomatoes I used 1 with habenaros
  • 1 15 oz tomato sauce
  • 2 teaspoon tsp Italian seasoning
  • 1 14.5 can beef broth
  • 2 cups rice I used brown /white is fine
  • 2 tablespoon parsley
  • salt and pepper to taste

Garnish

  • cheddar cheese
  • sour cream

Instructions

  • In a pot over medium heat ,heat olive oil. Add ground beef and cook until browned ,breaking up well.
  • Add onion and garlic and cook for 4-5 minutes
  • Next add the peppers to the pot and cook for 3-4 minutes .
  • Add tomatoes,tomato sauce,beef broth,Italian seasoning and salt and pepper-bring to boil
  • Turn down and simmer for 20-30 minutes
  • Meanwhile cook rice separately

NOTES

  • Best to keep rice separate as it soaks up the liquid rapidly
  • Serve with optional cheese and sour cream
