Instructions
Pre-Heat Oven 375°
Spray baking dish with food spray
Pound out chicken making it approximately ½ thick
In a mixing bowl combine softened cream cheese , crumbled bacon, cheddar , diced jalapeno,diced green onion
Spread cream cheese mixture onto chicken breast and roll chicken breast tightly - you can keep closed with tooth pick and remove later or wrap tightly in saran wrap and refrigerate for 15-20 minutes and it should stay together.
Combine ¼ cup olive oil and lime juice and brush on the chicken breasts
Put pork rinds in a shallow dish and roll chicken breasts in the rinds after wetting in oil mixture . Place Chicken in baking dish.
Sprinkle with optional parsley and bake for 30-35 minutes or until it reaches internal temperature of 165°
