Caramel Apple Pie Cookies

  • 1 Pkg Refrigerated Pie Crusts 2 Crusts
  • 6 oz Caramel Topping
  • 1 10 oz can Apple Topping
  • 1 Egg For Egg Wash
  • 2 tsps Cinnamon
  • ¼ cup Sugar


  • Pre-Heat Oven to 350°
  • Spray cookie sheet with non stick spray
  • Leave pie crusts out until they are room temperature
  • Spread a dusting of flour on your counter or work area
  • Roll out crusts slightly
  • Spread a layer of caramel topping on crust
  • Chop apple filling with a knife into smaller pieces
  • Spread apples over caramel
  • Cut other crust into 1- inch strips, weave to make lattice top layer (over apples and caramel)
  • Cut out circles (I used a floured glass and sharp knife ) I didn't have a small cookie cutter
  • Transfer cookies to a cookie sheet
  • Whisk egg until well beaten
  • Mix cinnamon and sugar together
  • Brush lattice tops with egg wash and sprinkle cinnamon and sugar on top of cookies
  • Bake for 20-25 minutes until golden brown
  • Let cool for 5-10 minutes before removing from cookie sheet
