Equipment

Ingredients

  • 2-3 large Boneless skinless Breasts
  • ½ Red Onion Diced
  • ¾ cup Red,Green and Yellow Peppers diced
  • 1 tbsp Minced garlic
  • 1 tbsp Butter
  • 1 tsp Salt
  • 1 tbsp Paprika
  • 1 tbsp Cayenne Pepper
  • 1 tbsp Cumin
  • 1 tbsp Black Pepper
  • 1 cup Chicken Stock
  • 1 cup Heavy Whipping Cream
  • 4 oz Cream Cheese
  • 1.5 cups Shredded Cheddar
  • 2 cups Pasta of choice -I used low carb Penne

Instructions

  • In a Large Skillet or Dutch Oven, heat 2 tbsp Olive Oil on Medium-High Heat Add Chicken Breasts to Pan - Cook 6-7 minutes on each side -Remove Chicken and set aside

  • Add Onions and Peppers and Garlic  To Pan With Butter Cook for 3-4 Minutes 
  • Chop Chicken and Add Back To Pan
    Next, Add all the Dry Spices and stir In 
  • Pour In Chicken Broth and Heavy Cream Bring to Boil
    Adding Cream
  •  Reduce Heat Mix in Cream Cheese and Cheddar Cheese 
  • Add Pasta - Simmer For 15-20 -when Pasta is Tender and Sauce is Thickened it is Ready to Serve
