Ingredients
2cupsall -purpose flour
2teaspoonbaking powder
1teaspoonbaking soda
2teaspooncinnamon
½tsp ground ginger
¼tsp nutmeg
½teaspoonsalt
¾cup vegetable oil
4largeeggs
1.5cups brown sugar
½cup granulated sugar
½cupunsweetened applesauce
1teaspoonvanilla extract
3cupsgrated carrots
¾cupwalnuts (or pecans)chopped
¾cup raisins
Cream Cheese Frosting
18 oz block cream cheese softened
½cupunsalted buttersoftened
2cupspowdered sugar
1tsp vanilla extract
1tablespooncream or milk
Instructions
Cake
Pre-Heat Oven to 350° Spray pans with food release and flour Whisk together in a mixing bowl flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt when well combined -set aside
In a separate large bowl, whisk together vegetable oil, carrots, eggs, brown sugar, granulated sugar, applesauce, vanilla extract, raisins, and walnuts
Blend wet ingredients into dry ingredients -mix- do not over blend
Pour batter into the well-greased and floured round cake pans
Bake for 30-35 minutes or until tooth pick is dry when stuck into cake. Cool on a cooling rack
Making the Frosting
In a stand mixer with a paddle attachment or in a large bowl and a hand mixer beat cream cheese until smooth.
Next, add the butter and mix for 1 minute or until smooth. Slowly add powdered sugar
Next, add vanilla and cream
Assemble cake
Frost cake and add optional nuts on sides (tilt cake slightly with a pan under to catch falling nuts)
