Easy Beef Enchiladas

Ingredients

Enchilada Sauce

  • 1 14 oz Can Tomato Sauce
  • 1 7oz can Tomato Paste
  • ½ Cup Beef Broth
  • 2 Tbsp Vegetable oil
  • 2 Tbsp All-Purpose Flour
  • 2 tablespoon Chili Powder
  • ½ tsp Cumin
  • ½ tsp Red Cayenne Pepper
  • Salt and Pepper to taste

Enchiladas

  • 1.5-2 lbs Ground Beef
  • 1 Medium White or Yellow Onion Diced
  • 8 10 inch Flour Tortillas
  • 2 Cups Shredded Cheddar or Mexican Mix
  • ½ Cup Green Onion
  • Sour Cream and Guacamole optional garnish

Instructions

  • Enchilada Sauce
  • Add the vegetable oil, flour, and chili powder together in a medium pot. Heat on medium and whisk the ingredients together. Whisk continuously until sauce begins to boil. Stir the mixture for one minute once it begins bubbling.
  • Next whisk in the Beef broth, tomato paste, cumin, garlic powder, and cayenne pepper until smooth. Heat the sauce stirring occasionally reduce heat. Once it reaches a simmer it will begin to thicken slightly.
  • Stir in salt and pepper - the sauce is ready to use.

Enchiladas

  • Pre-heat Oven 350°
  • Brown Ground Beef and Onion
  • Spray a 9x13 baking dish with food release (pam ) spread a thin layer of enchilada sauce on bottom of dish
  • Scoop ground beef /onion and a small amount of cheese into a tortilla
  • Fold tortilla seam side down and place in a baking dish
  • Line the enchiladas in the dish, put them so they are tight in the dish so they stay rolled
  • Cover with sauce and cheese
  • Bake at 350° for 30 minutes
  • Garnish with Green Onion
  • Optional sour cream or guacamole
