- 1 box White Cake Mix or flavor of choice
- ½ cup vegetable oil
- 4 egg whites or 3 whole eggs but will tint yellow
- 1.25 cups water
- 1 teaspoon peppermint extract
- food coloring a drop or 2 in each cupcake
Butter Cream Frosting
- 1 cup softened unsalted butter
- 3 cups powdered sugar
- 2-3 tablespoon heavy or whipping cream
- 1 teaspoon vanilla extract
- ½-1 teaspoon peppermint extract to taste
- pinch of salt to taste
Make Cake Mix as directed on box
Pre-heat oven to 350°
Pour into cupcake cups
1-2 drops of food coloring in each cupcake
swirl with toothpick
Bake as directed -18-20 minutes
Cool Completely
Frost with Buttercream Icing- ( or substitute favorite icing)
Top with crushed candy and sanding sugar
