Equipment

  • Crockpot, Slow Cooker
  • Electric Mixer

Ingredients

  • 3 lbs Red potatoes or potatoes of choice
  • 1 Cup Chicken Broth Vegetable Broth or Water can be used
  • 1 Stick Butter Cubed - plus additional for garnish
  • 3 cloves minced garlic
  • ¾ Cup Sour Cream Greek Yogurt can be used
  • tsp salt or to taste
  • ½ tsp black pepper or to taste
  • ½ cup milk warm to avoid lumps

Instructions

  • Chop potatoes into equal-sized squares for consistent cooking - add to slow cooker /crockpot -add butter to the top, add minced garlic, pour chicken broth over everything - cover and cook on high for 3-4 hours until soft

  • Mash with hand masher or electric mixer (I did both)
  • Stir in sour cream, warm milk, salt and pepper to taste

  • Garnish with more butter and chives
