Easy Fiesta Lime Chicken

Chicken Breasts seasoned with lime juice and spice, topped with jack cheese, sour cream and pico.

Ingredients

  • 4 5 oz. Chicken Breasts boneless, skinless
  • 3 tbsp. Lime Juice
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 2 tablespoon Olive Oil
  • 1 tablespoon Honey
  • 1 teaspoon Minced Garlic
  • 1 tablespoon Chopped Cilantro
  • ½ teaspoon Salt

Salsa Ranch

  • ¼ cup Ranch Dressing
  • ¼ cup Salsa
  • 2 tablespoon Sour Cream
  • 1 teaspoon Lime Juice
  • 1 tablespoon Chopped Cilantro
  • 1 cup Shredded Jack Cheese

Instructions

  • Pre-heat oven to 350°
  • Get 4-5 boneless skinless chicken breasts -pound out to around 1 inch thick.
  • Whisk together all ingredients for the marinade( lime juice, chili powder, oil, honey, garlic, salt, pepper, cilantro) in a bowl or shake together in a freezer bag. Add chicken to the marinade and refrigerate for at least 30 minutes.
  • Remove chicken from bag or bowl, shake off excess marinade place in a 13 x9 baking dish ( I spray with food release) Leave a little space between the chicken.
  • Bake chicken for 20 minutes
  • Mix together salsa ranch ingredients. Spoon 2 tablespoons of the ranch on each breast. Sprinkle ¼ cup of shredded cheese on top of each chicken breast. Return to oven for 5-10 minutes until golden brown.
  • Serve on tortilla strips or rice. Top with sour cream, guacamole, salsa, pico de gallo, or any other garnishes you please.
