Pumpkin Bars
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 2 teaspoons pumpkin pie spice
- 1 cup butter I use salted butter and eliminate actual salt
- 1 cup raisins
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 15oz. can pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
Cream Cheese Frosting
- 1 8oz. block cream cheese softened
- 4 tablespoons butter softened
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- 3 tablespoons milk oe cream
Pumpkin Bars
Pre-heat oven to 350° Spray 10 x 15 inch jelly roll pan or pan of choice
In a mixing bowl whisk together flour, baking soda, cinnamon, pumpkin pie spice
In a separate large microwaveable bowl, melt butter in 30 second increments until melted. Cool for 2-3 minutes
Add to the butter, brown sugar, granulated sugar, pumpkin, eggs and vanilla extract. Mix well . (do not use electric mixer)
Add dry mixture into the wet ingredients. Mix well.
Fold raisins into mix
Pour batter into prepared pan. Spread evenly.
Bake in preheated oven for 25-30 minutes until toothpick comes out clean when inserted.
Cool completely - 2-3 hours
Cream Cheese Frosting
In a medium mixing bowl, beat cream cheese on medium high until smooth.
Add butter , vanilla extract , slowly add powdered sugar.
Add milk or cream and continue to beat until smooth
Spread evenly over pumpkin bars- sprinkle with cinnamon
