- 2 cups shredded chicken rotisserie works well
- 1 fresh jalapeno chopped and seeded
- 2 tsp minced garlic
- 1 onion diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 can diced tomatoes with habaneros or green chilis if you want it milder
- 1 large can crushed tomatoes
- 2 cups chicken broth
- 1 can (14.5 oz) black beans rinsed and drained
- 1 cup corn if using canned drain
- ¼ cup cilantro
- ¼ cup lime juice
Garnishes
- Tortilla Strips
- Sour Cream
- Cheddar Cheese
- Guacamole or sliced avocado
- Scallions
Heat olive oil in a large pot over medium high heat. Add onion, minced garlic and jalapeno cook until soft
Add chicken , beans, tomatoes, corn and chicken broth and lime juice
Stir in all remaining ingredients
Simmer on medium low heat for 15-20 minutes until steaming hot
Serve hot with tortilla strips and optional garnishes
