Pre-Heat Oven to 350°
Spray cookie sheet with non stick spray
Leave pie crusts out until they are room temperature
Spread a dusting of flour on your counter or work area
Roll out crusts slightly
Spread a layer of caramel topping on crust
Chop apple filling with a knife into smaller pieces
Spread apples over caramel
Cut other crust into 1- inch strips, weave to make lattice top layer (over apples and caramel)
Cut out circles (I used a floured glass and sharp knife ) I didn't have a small cookie cutter
Transfer cookies to a cookie sheet
Whisk egg until well beaten
Mix cinnamon and sugar together
Brush lattice tops with egg wash and sprinkle cinnamon and sugar on top of cookies
Bake for 20-25 minutes until golden brown
Let cool for 5-10 minutes before removing from cookie sheet
