- 4 Chicken Thighs
- 2 tablespoon Olive Oil
- ½ teaspoon Salt
- 1 teaspoon Pepper
- 1 tablespoon Lemon Juice
- 1 tablespoon Minced Garlic
- Parsley
Preheat oven to broil -high. Move the rack to the middle of the oven.
Grease an 8x8 baking dish. Place chicken thighs in the dish, skin side up.
In a small bowl whisk together olive oil, lemon juice, salt, pepper, and garlic
Brush oil mixture onto chicken. Save some for basting later.
Broil for 20-25 minutes basting and turning halfway through.
Chicken is done when internal temperature reaches 165°
Let sit for 5 minutes before serving
Garnish with Parsley.
