Easy Caramel Apple Pie Cookies are delicious and so simple to make. Using pre-made refrigerated pie crust, canned apple pie filling and caramel ice cream topping they are a piece of cake. Or Cookie -haha.
Easy Caramel Apple Pie Cookies
I have shared some pretty good cookies in the past, Soft Oatmeal Raisin Cookies, and Sugar Cookie Cherry Pie Bars They are both delicious. However, since the first time, I saw these apple pie cookies on cincyshopper.com I knew I wanted to make them. Although mine arent nearly as pretty as hers lol they were fabulous.
These cookies taste just like a mini pie, perfect with a glass of milk or a cup of coffee. Apple pie is one of my hubs favorite desserts so they definitely tempted him to sway from his diet. He did stay strong though. What he doesn't know is I put what I didn't eat (which was way too many) in an airtight container and put them in the freezer for a rainy day after he's met his weight goal. He's so determined, which I could get that determination. Making desserts daily to share with all my friends and followers definitely makes it hard, but so much fun.

- Store-Bought Pie Crust
- Canned Apple Pie Filling
- Caramel Ice Cream Topping
- Egg ( for egg wash)
- Cinnamon
- Sugar

Caramel Apple Pie Cookies
Equipment
- OVEN
- Mixing Bowl, serving bowl , spatula
Ingredients
- 1 Pkg Refrigerated Pie Crusts 2 Crusts
- 6 oz Caramel Topping
- 1 10 oz can Apple Topping
- 1 Egg For Egg Wash
- 2 tsps Cinnamon
- ¼ cup Sugar
Instructions
- Pre-Heat Oven to 350°
- Spray cookie sheet with non stick spray
- Leave pie crusts out until they are room temperature
- Spread a dusting of flour on your counter or work area
- Roll out crusts slightly
- Spread a layer of caramel topping on crust
- Chop apple filling with a knife into smaller pieces
- Spread apples over caramel
- Cut other crust into 1- inch strips, weave to make lattice top layer (over apples and caramel)
- Cut out circles (I used a floured glass and sharp knife ) I didn't have a small cookie cutter
- Transfer cookies to a cookie sheet
- Whisk egg until well beaten
- Mix cinnamon and sugar together
- Brush lattice tops with egg wash and sprinkle cinnamon and sugar on top of cookies
- Bake for 20-25 minutes until golden brown
- Let cool for 5-10 minutes before removing from cookie sheet
